And that means:
The word Serrano means “from the mountains” and in this case it is taken very seriously in all aspects that are involved in the making:
- Aged for 24 months in the only USDA approved ham curing facility that is located in a nature park in the mountains of Salamanca, “La Alberca”.
- The producer has full control over the whole process - from raising the pig for 1.5 years with small local farmers, to the slaughter in its own facilities and the air-dry curing for over 2 years.
- The authentic Spanish pig breed, a mix of the Large White, Land Race and Duroc, has excellent fat content and great marbling. That makes the pig superior for 24-month aging.
- By the same producer as the famous Jamón Ibérico - FERMIN: It is in the hands of some of the most talented ham makers (Jamóneros) that Spain has to offer.
- These ham makers check each ham individually in regular intervals to see the aging status.
- The boneless ham is de-fatted and trimmed - That means less waste and no rancid taste from external fat!
